Nicole's Recipe of the Month

Nicole came up with this tasty recipe purely by accident.  She was preparing a few huge chunks of Yellow fin tuna to sauté for lunch and as she trimmed the filets to size, she put the odd shaped pieces onto a plate for 'Free-duh', her cat.  Well, as the mound of scraps grew, she thought, "How much fish can a 2 pound cat eat without vomiting all over the house?"  So, she tossed the boneless scraps into a sauce pan and added this and that and 'Voila', TUNA CHOWDER!

This is Nicole at her finest, she really knows how to filet her fish!

Tuna Chowder

3 cups of boneless cubed Yellow fin tuna
4 strips of bacon coarsely chopped
1 large can of tomato sauce
1 onion coarsely chopped
2 celery stalks sliced
2 carrots cubed
1 large potato diced
2 cloves of garlic diced
2 or 3 Jalepeño chilies to taste
Bay Leaves
Fresh parsley
Salt and pepper

-Fry the bacon in a saucepan and add the onion. 
-Add the cubed tuna and sear. 
-Add a small amount of water and the rest of the ingredients.
-Simmer until the vegetables are cooked. 
-Season to taste.
